Recipe: Mexican bean soup
Beans, they are indispensable in every Latin American cuisine. Boring? No. There are many different kinds of beans and you can vary them endlessly. One of my favourite recipes with beans is Mexican bean soup. Here's how to make it.
Ingredients for 4 persons:
- Mexican bean mix
- 1 onion
- 2 cloves of garlic
- 2 tomatoes
- 1 red pepper
- 1 stem of celery
- 2 carrots
- 1 red pepper
- 2 stems of spring onion
- 1ts cumin powder
- 1ts paprika powder
- Lemon
- 1l stock
- 4 tablespoons crème fraiche
Preparation:
- Chop the onion and garlic and dice the pepper, carrot, celery and tomatoes. Cut the spring onion and red pepper I small rings.
- Put some oil in the pan and fry the onion and garlic for 2 minutes.
- Add the paprika, carrot and celery to the pan and simmer for another 2 minutes.
- Then put the cumin and paprika powder and pieces of tomatoes in the pan.
- After a few minutes add the stock and let the soup simmer gently.
- Meanwhile, drain the pot of Mexican bean soup and add to the soup.
- Season the soup with salt and pepper and spoon it into a bowl.
- Sprinkle the chopped spring onion and red pepper over the soup and add a spoonful of crème fraiche per soup bowl.
